
POUR OVER (Chemex)
The Chemex is one of the most refined ways to brew coffee, delivering a clean, balanced cup with rich flavors and no unwanted bitterness. Its ultra-thick paper filters slow the brew time, allowing for optimal extraction while preventing unwanted oils and fine particles from entering your coffee. Made from non-porous Borosilicate glass, the Chemex won’t absorb flavors, ensuring a pure and consistent taste every time.
What You’ll Need:
- Chemex Brewer
- Chemex Filter
- Fresh SZNS Coffee
- Scale & Timer (optional, but highly recommended for precision)
- Gooseneck or Slow-Pour Kettle
Preparation:
- Heat Your Water: The ideal temperature is 198–205°F for optimal extraction.
- Grind Your Coffee: Use 45g of coffee for about 25 fl oz (740g) of water. The grind should be medium-coarse, resembling sea salt.
- Prep the Filter: Place the Chemex filter inside the brewer, with the thicker, three-layered side over the spout.
- Rinse the filter thoroughly with hot water to remove any paper residue, then discard the rinse water.

Add Coffee & Tare the Scale: Pour your freshly ground coffee into the filter.
Set the brewer on your scale and zero it out.
Brew Process:
1. The Bloom (First Pour): Pour 95g of hot water evenly over the grounds.
Let it sit for 45 seconds—this allows gases to release and enhances flavor.
2. Main Pours: Slowly pour the remaining water in three equal pours, about one minute apart. The final weight should be 740g.
3. Finish & Enjoy: Once the water has fully drained, remove and discard the filter with the used coffee grounds.
Give the brewed coffee a gentle swirl to aerate and enhance the flavor.
Roasters Tip: If your brew takes longer than 5 minutes, try a coarser grind for a better flow rate. Now, pour yourself a cup and enjoy the smooth, crisp flavors of a perfectly brewed Chemex.
