
SIPHON / VACUUM POT
The siphon (or vacuum pot) is one of the most theatrical and precise ways to brew coffee, blending science and craft into a truly captivating experience. Using vapor pressure and vacuum suction, the siphon brews coffee in two chambers, allowing for full immersion and a clean separation of grounds.
What You’ll Need:
- Siphon brewer (tabletop or stovetop)
- Butane burner or heat source
- Medium grind SZNS Coffee
- Stirring paddle
- Scale

Preparation:
- Ratio: 1:15 (e.g. 25g coffee to 375g water)
- Add water to bottom globe

Place top chamber loosely until water boils
Brew Process:
- Heat water in the bottom globe until it rises to the upper chamber.
- Add coffee and stir to saturate.
- Brew for 1–1.5 minutes.
- Remove the heat source.
- As vacuum pressure drops, brewed coffee filters back into the lower chamber.

Remove the upper chamber, stir coffee, and serve.
Roaster’s Tip: For the best results, use freshly ground coffee with a medium to medium-coarse grind — too fine a grind can lead to over-extraction and bitterness. Maintain a consistent water temperature (around 200°F) and ensure the water in the lower chamber is just reaching a boil, not bubbling too aggressively.
